Looking for a healthy lunch?
Eating a healthy lunch was pretty easy when I had access to an incredible salad bar in the corporate cafeteria. But I’d trade in corporate cafeterias for wfh life any day. Even if it means I have to be a little more intentional to get my daily veggies in.
Good news - you can make these easy veggie packed lunches in a matter of minutes.
Chicken Summer Berry Salad
Leftover chicken from the weekend or even a rotisserie chicken make this summer salad a breeze.
Grab a handful of mixed greens, spinach or romaine lettuce and fill a plate. Top with chunks of chicken and some washed berries like raspberries, blueberries or sliced strawberries. Sprinkle on some feta, balsamic vinegar & oil and add a crack of black of black pepper and voilà - lunch.
If you need a little crunch, go for some slivered almonds or a sprinkle of pepitas for a healthy alternative to croutons.
Greek Chicken Pita
When you make a fast lunch that just means more time for Housewives right? Lord knows it’s nice to focus on someone else’s drama for a while. More rotisserie or leftover chicken and you can throw this together on a commercial break.
Grab your cutting board and slice a few cherry tomatoes, cucumbers and kalamata olives. (You can even throw in some red onion for a nice bite if you’re into that sorta thing.)
Heat a piece of pita bread in the microwave for 15-20 seconds and then smear on some dill or tzatziki sauce (look for it in the refrigerated produce section).
Add some greens and top with your chicken, veggies, olives and feta.
Green Smoothie
Trust me, it’s delicious.
I love a good green smoothie. The spinach gives it the distinct color that screams I’m good for you but the fruit tames the taste so all you taste is freshness. I’ll eventually give you an actual recipe for a green smoothie, but in all actuality - it’s personal preference. The key - the absolute key - is that you MUST invest in a good blender.
